Pancakes (mancakes*)

Ingredients

· 1 cup oat flour

· 1 banana

· 1 tsp baking powder

· soy milk - as needed

Pouring Cream (optional)

· ½ cup ground walnuts

· ¼ cup coconut milk

· 1 tsp coconut oil

· 1 tsp maple syrup

· ½ tsp vanilla extract

Preparation

1. Add some soy milk and mix to make a runny paste.

2. Add baking powder.

3. Add in the oat flour.

4. Add additional soy milk to the mixture to create a batter that is not too thick, but can still flow.

5. Let stand for 10 mins.

6. Dry fry the mixture in ½ cup full size portions and keep in warmed oven to retain heat while you cook the others.

7. Put onto plate.

8. Add your choice of sliced fruit or some of the pouring sauce or a small drizzle of maple syrup.

9. Blend in blender or use a stick wand until smooth. Add more or less coconut milk to get the consistency you want. Best made fresh.
